ISTAB, which is a complete system of emulsifier stabilizer which is standardized blends of guar gum and hydrocolloids from seaweed and vegetable sources. Since ISTAB is designed to give consistent mix viscosities over a period of continuous supply in order to minimize variation at user lever hereby saving the users valuable time in adjusting amount of different ingredients for Stabilization & Emulsification.
As the stabilizer contains fine and high quality of ingredients, it increases the quality and mouth feel of the ice cream. It also enhances the flavour and the texture of the ice cream.
The growth of ice crystals during the processing and storage of ice cream is one of the biggest challenged faced by ice cream manufacture the use of Stabilizers in an ice cream mix so as to control free water.
